Thaw Out That Venison and Get Grillin'

Winter may be here, but don’t put that grill in storage just yet. We’ve unearthed a tasty recipe for some whitetail deer sliders that will knock your Mucks off. If you’re looking for a creative and delicious way to use some of that ground venison you’ve got in the freezer, then you’ll want to give this easy meal a try.

Whitetail are one of the most popular hunting game, but because of unregulated hunting in the early 20th century, their numbers decreased to around 300,000 in the United States. Due to the efforts of hunters and conservationists, populations now flourish across the country by upwards of 30 million.

Whitetail is also a nutrient-rich and savory meat. It is high in protein and has less saturated fat than ham, salmon, or lean roast beef. In fact, four ounces of venison meat supplies about two-thirds the daily requirement for protein and almost one-third the daily requirement for iron, yet only has about 186 calories and 1.4 grams of saturated fat.

So let’s thaw out that venison and get grillin’.

Ingredients

Servings 4-6

• 1 lb. Ground Venison
• 2 Tablespoons Whole Grain Mustard
• 1 Tablespoon Worcestershire
• 1 Tablespoon A1 Steak Sauce
• 1 Tablespoon Garlic Powder
• 1 Cup Bread Crumbs
• 1 Egg
• Salt and Pepper
• Smoked Gouda
• Bacon
• Hawaiian Sweet Rolls
• Grilled Onions (optional)

Step-by-Step Instructions

1. In a large bowl, add mustard, bread crumbs, egg, garlic powder, salt, and pepper to the ground meat. Mix all ingredients by hand and then form into small patties. Use a 1/4 cup measuring cup to size how much meat to use when forming your patties. Place meat on tinfoil and press gently with your thumb creating a small indent in the center. This will help keep patties from shrinking when cooking.

2. Pre-heat the grill to high temperature.

3. Leave the meat on tinfoil so it doesn’t dry out.

4. Cook 7 minutes or until brown and then flip patties. Continue cooking on other side until brown – 7 minutes. Add smoked gouda cheese to the top of the burgers during the last 2 minutes of cooking. Close the lid to melt the cheese.

5. While cooking your burgers, place bacon slices on tinfoil and place on the grill for the last few minutes of cooking. It’s also a good time to toast the buns. We recommend Hawaiian Sweet Rolls.

6. Place sliders on Hawaiian Sweet Rolls, top with a slice of bacon, and eat.
