When it comes to a wild game breakfast in the field, it's easy to fall back on sausage and eggs; but with a couple of extra ingredients you can take your camp breakfast to another level with this Wild Turkey Crunchwrap. Don’t be surprised when your hunting partners request this breakfast on every hunting camp, it’s that good.

This recipe calls for wild turkey breast because it is easy to process in the field, but ground turkey leg or any other ground wild game would also work great. The turkey sausage and queso spread can be made ahead of time and brought into the field. This recipe will yield two crunchwraps.

It is recommended to cook turkey to an internal temperature of 165℉.

Ingredients:


Turkey Sausage

  • 10 oz turkey breast, ground or rough chopped
  • 1 tsp chili powder
  • 1 tsp cumin powder
  • 1 tsp oregano
  • 1 tsp ancho chili powder
  • 1½ tsp salt

Queso Spread

  • ¾ cup queso dip (your brand of choice)
  • 1 tbsp chipotle puree

Other

  • 2 12” flour tortillas
  • 4 6” corn tostadas
  • 2 6” flour tortillas
  • 2 eggs
  • 6 slices bacon
  • ⅓ cup sour cream
  • 10 sprigs cilantro (optional)
  • 1 cup chopped lettuce
  • ⅓ cup diced tomato

Step-By-Step Instructions:


Queso Spread

  1. Combine the ingredients and set aside.

Wild Turkey Sausage

  1. Mix the ingredients and form the sausage into a patty.
  2. In an oiled pan, brown the sausage patty over medium high heat. Approximately 2 minutes.
  3. Flip the sausage and cook all the way through. 
  4. Using a spatula, break the sausage up into small bite-sized pieces.

The Crunchwrap

  1. Cook the bacon and set aside.
  2. Fry the eggs sunny side up in the bacon fat.
  3. Divide the queso and spread between the 4 tostadas.
  4. Assemble the crunchwrap. See build order below.
  5. Once assembled, fry the crunchwrap in oil over medium-low heat until golden brown and crispy.
  6. Flip and crisp the other side.
  7. Cut the crunchwrap down the middle and serve with hot sauce.
